Mixed Vegetables

All the goodness in these veggies is going to brighten up your day.

Ingredients:
– eggplants
– tomatoes
– onions
– carrots
– yellow peppers
– dried parsley
– olive oil
– sea salt

Instructions:
Dice the eggplants, tomatoes, onions, carrots and yellow peppers and place them in an oven tray. Add some sea salt, olive oil and dried parsley. Put them in the oven and cook for 45 to 50 minutes.
