Raw Vegan Strawberry Cake

If you love strawberries and are a fan of healthy desserts that are easy to make and don’t require the oven, then this is the perfect cake for you! It’s made with just a few ingredients, but the flavour is absolutely amazing. I would say it’s the perfect refreshing treat!

Ingredients:
– 200 g almonds
– 400 g dates
– 150 g coconut flakes
– 1/2 kg strawberries

Instructions:
Prepare a round cake tin with removable base. Blend the almonds until coarsely ground. Add 200 g pitted dates and a little bit of water and blend until the mixture comes together. Spoon the mix into the tin, spread evenly onto the base and press tightly down. Place into a fridge.

Place half of the strawberries and the rest of the dates into a high speed blender and blend until you have a smooth puree. Add the coconut flakes and mix them well. Then spoon onto the first layer and smooth out the top.

Cut the rest of the fresh strawberries and decorate, then place into a freezer for about 3 hours to set. Once set, carefully remove from the tin. You can then store it in a fridge or freezer.
